A gentle, lavish ginjo aroma of peach opens this Junmai Ginjo from Koimari's Saki line, made with Yamada Nishiki polished to 55% and soft water from the Ryumon river system. The palate has a slight natural spritz and a fine balance of sweetness and acidity, with ripe mango, pear, blood orange and white peach, a touch of mint and the crunch of Fuji apple. A faint grapefruit-like bitterness rounds off the finish. Serve chilled with seafood or sushi.

About the brewery
The Maeda family ran a kimono business in the Edo period before Maeda Kenshichi turned to brewing at Imari, Saga, in 1909. The Koimari mark, named after the porcelain the town is known for, followed in 1971, and the more modern Saki line was added in 2008. The brewery is now led by fourth-generation president Kumiko Maeda, who aims to keep to the house's history while looking for the form sake should take today.
