Hanabie is the name for one of the temperatures at which sake is enjoyed, around 10°C. This limited seasonal Junmai Daiginjo, made entirely from Yamada Nishiki, opens with a bright, spring-like fruity aroma of white peach and pear with a gentle floral lift. Sweetness and acidity are well balanced over a smooth, polished umami and a fine texture, leading to a clean, graceful finish. Serve chilled at 5–10°C; as it warms, the sweetness comes forward.
About the brewery
