Part of a Kaiun series that sets three sake rice varieties side by side: Aiyama, Yamada Nishiki and Shunyo. All are brewed at a polishing ratio of 65%, with the Aiyama and Yamada Nishiki flat-polished. This bottling has the clear umami typical of Yamada Nishiki and an impressively well-defined structure. The refined umami spreads smoothly without being showy, and the finish is clean, leaving a calm, pleasant aftertaste. Balancing richness and crispness, it is very easy to drink with a meal, including simmered dishes that highlight the broth.

About the brewery
Doi Shuzojo was founded in Kakegawa, Shizuoka, in 1872 by Yaichi Doi, and the family marked its 150th anniversary in 2022. The house has long relied on Noto toji craftsmanship and its own in-house rice milling. Its Kaiun label favours restrained sweetness and understated aromatics, aiming for sake that stays interesting through a whole meal rather than overwhelming it.
