A super-dry Junmai Daiginjo that feels at once familiar and rare. Brewed with Yukimegami rice polished to 45% and fermented with Yamagata yeast, it delivers a strong flavour that spreads across the tongue before a sharp, clean aftertaste, one of the hallmarks of Shuho's dry sake. At 17% it has real presence, yet the dryness keeps it lively with food. Serve well chilled alongside sashimi, grilled fish or fried dishes.

About the brewery
Shuho Shuzojo was founded in 1890 by Takeda Shogoro at Yambe-machi in north-east Yamagata City, at the foot of the Zao range. It brews by hand with the clear water of the mountain foot, aiming for sake with a character of its own, and is notably willing to work with newly bred rice varieties to suit contemporary palates.
