Daigin Nozomi is a premium Junmai Daiginjo crafted entirely by hand, using the same meticulous techniques the brewery reserves for its competition sake. Brewed in the traditional winter season from Yamada Nishiki polished to 40%, it reflects Funaki Shuzo's commitment to classic ginjo craftsmanship. Delicate floral and fruity notes are balanced by a silky texture and a clean, sophisticated finish, giving real depth and finesse. Serve chilled in a wine glass to appreciate its delicate bouquet and layered complexity.

About the brewery

Funaki Shuzo was founded in Fukui City in 1866 and still brews there under the Kitanosho name, taken from the old castle town. Its brewing water is subsoil water of the Kuzuryu River, drawn from around 150 metres below the brewery. The house aims for a clean, crisp palate with a soft mouthfeel, deliberately restrained so that local Fukui dishes can lead.
