About the brewery

Saiya Shuzoten was founded in Yurihonjo, Akita, in 1902. Its buildings climb a natural slope so rice moves downhill by gravity as it becomes sake, and water springs from the site itself. Under toji Toichi Takahashi the house works without paddle stirring, filtration or added water, and has cultured its own yeast for more than thirty years.
