About the brewery
Michisakari brews in Kasahara, Tajimi, in eastern Gifu, and traces its founding to the late Edo period. The house is known almost entirely for dry sake, working in a band of roughly +12 to +19 on the sake meter. The aim is a sake that supports a meal and invites the next glass rather than dominating the table, with sweetness, acidity, umami, bitterness and astringency held in balance.
