A modern, refreshing Junmai Ginjo brewed entirely from Gifu ingredients, using Hatsushimo, a rice prized in the sushi trade. The aroma is fresh and elegant, reminiscent of linden blossom, followed by clear minerality, lively acidity and gentle rice umami. Clean, pure and dry, with a sharp finish, it drinks rather like a crisp white wine and suits Italian and French dishes as well as Japanese food. Serve chilled.

About the brewery
Hayashi Honten was founded in Kakamigahara, Gifu, in 1920 by Eiichi Hayashi, a rice farmer who wanted to brew from the rice he grew himself. Brewing water comes from the subsoil flow of the Nagara River, and the Hyakujuro range runs from dry junmai to aged and lower-alcohol bottlings.
