The most highly polished sake in Gikyo's Junmai Ginjo range. Special A-grade Yamada Nishiki from Hyogo is polished down to 30% before brewing, and the sake is carefully kept at low temperature until it leaves the brewery. Bottled undiluted as genshu, it is elegant yet full, with a smooth, rounded palate and a long, refined finish. Serve chilled in a wine glass to enjoy its aroma.

About the brewery
Yamachu Honke Shuzou was founded in the mid-Edo period and brews in Aisai, Aichi, with spring water linked to Mt. Ontake and drawn from around 250 metres below ground. Its aim is to draw the fullest potential from carefully grown rice, an approach that shows in the Gikyo label's range of genshu at different polishing ratios.
