Prefecture: Aichi
Rice & polishing: Yamada Nishiki (Special A), polished to 60%
Style: Junmai Ginjo, light and lower in alcohol
Food pairings: Salt-grilled fish, oden, yakitori, sukiyaki
Taste: Light, smooth, savoury, mellow
Alc.: 14%
A light, lower-alcohol junmai made to accompany food: the brewer's idea was to keep the alcohol at 14% so it sits comfortably alongside a meal. Served chilled it is smooth on the palate, with flavour that gradually opens up afterwards. Let it warm to room temperature and it becomes fuller and more savoury, which makes it an excellent all-round sake for the dinner table.

About the brewery
Yamachu Honke Shuzou was founded in the mid-Edo period and brews in Aisai, Aichi, with spring water linked to Mt. Ontake and drawn from around 250 metres below ground. Its aim is to draw the fullest potential from carefully grown rice, an approach that shows in the Gikyo label's range of genshu at different polishing ratios.
