This is the first Atago no Matsu sparkling sake made by secondary fermentation in the bottle, which gives it fine yet powerful bubbles. A prototype won the Best Award at the Oriental Sake Awards 2024, and after further trial brews Niizawa released this version. Created around the idea of "the ultimate sake to enjoy with meals", it has a strawberry-like aroma and a clean finish. Serve well chilled with kiwi and fresh cheese, white fish carpaccio or fried oysters.
Keep refrigerated and open gently.
About the brewery
Niizawa Brewery dates its founding to 1895 in Osaki, Miyagi, and moved production to Kawasaki Town in Shibata District in 2011. Unusually, it does not run a conventional toji hierarchy: its brewers work as a team under a young head brewer, with the stated aim that today's sake should be better than yesterday's. It uses diamond-roll milling to reach very high polishing rates.
