Brewed by kurabito who all hail from Akita, this Junmai Ginjo uses first-class Akita Sake Komachi rice polished to 55% and very soft water from the brewery's own well. The result is elegant, soft and savoury: pure on the palate, with a creamy, smooth texture that recalls fresh cheese and cashew nuts, followed by cleansing acidity. Serve chilled.

About the brewery

Akita Seishu is the umbrella company for two breweries in Daisen, Akita: Dewatsuru, dating from 1865, and Kariho, from 1913. Dewatsuru, the source of the Yamatoshizuku label, works with markedly soft water from the Dewa hills and an Akita-style kimoto method that gives fine-grained acidity and a smooth texture.
