Rice & polishing: Yamada Nishiki grown by Masaharu Kitajima in Asakura, polished to 80%
Style: Junmai
Food pairings: Yakitori, char siew, grilled fish, mild curries
Taste: Tropical, fruity, clean, refined
Made with Yamada Nishiki grown by farmer Masaharu Kitajima in Asakura City, Fukuoka Prefecture. Yamada Nishiki is prized for its large grains and high proportion of starchy heart (shinpaku), and that quality shows here: although the rice is polished only to 80%, the sake has a beautifully clean finish. The aroma brings tropical fruit to mind, making this an unusually expressive, lightly milled Junmai. Serve chilled or at room temperature.
