CICALA – Junmai Ginjo with Crisp Apple-Like Acidity.  Named after the Italian word for cicada, CICALA evokes the image of summer—its label inspired by a cicada resting on a tree, and its sake crafted to refresh. Brewed with Yume Kōbo, a patented yeast known for producing high levels of malic acid, it delivers a lively, fruit-forward character.  Chilled, it offers a crisp, vibrant acidity reminiscent of green apples; at room temperature, it softens into a gentle sweetness. 「CICALA(チカーラ)」とはイタリア語でセミを意味し、茶瓶に詰め、木にとまっているセミをイメージしたラベルで、夏にピッタリのリンゴ酸高生産の特許酵母「夢酵母」で純米吟醸を醸しています。リンゴ酸とは果物のリンゴと同様に、冷やすと「キリッとした酸味」を、常温になると「優しい甘味」を感じるのが特徴となります。
