This sake was created by a brewery obsessed with rock oysters, in consultation with rock oyster professionals. It's a junmai sake dedicated to rock oyster lovers. It's made exclusively from rice and rice koji, crafted using Kariho's unique yeast starter method. White koji is used in part of the koji, creating a vibrant acidity. *Of course, it also pairs well with rock oysters from outside Akita!
