A well-balanced Muroka Junmai Ginjo that puts the character of Matsuyama Mii rice at its heart. Native to Ehime, Matsuyama Mii resembles Gohyakumangoku but with larger grains, and is ideal for crisp, dry sake. This bottling suits drinking from spring to autumn: served at room temperature in spring, it feels gentle and pleasant in the mouth, while well chilled in summer it turns fresh and vibrant. One of the finest brews from Iyo Kagiya.

About the brewery
Seiryo Shuzo has brewed at Shifu in Saijo, Ehime since 1877, when the ninth-generation head of the Kagiya family turned the household business to sake; the name recalls the family's earlier role as keepers of the key to the village rice store. Brewing water comes from beneath sacred Mt. Ishizuchi, and the brewery works with Ehime-grown rice. The Iyo Kagiya house style favours low-temperature maturation to build umami and an unfiltered finish, made for drinking with food.
